Cooked by TFW: Puréed Sweet Potatoes

It's week 2 of Sweet Potato Appreciation Month!!!

I feel like this week is the moment y’all discover I’m a “hashtag food fraud.” I say that because at some point, somebody has to realize that I prepare my sweet potato almost identically to my cauliflower. But as I’ve been saying since the start of fight camp - did you know I was in fight camp? Final week! Fights are this Saturday! GET YO’ TICKETS! - eating better is about eating smarter. Most of my fight camp meals are super simple and quick to make for a reason. Today’s follows that recipe (SEE WHAT I DID THERE?!) for success!

Puréed Sweet Potatoes! Better for you than regular mashed potatoes, more colorful than puréed cauliflower. When I’m done with fight camp - did you know I was in… sorry… - remind me to share my MARBLED mashed potatoes recipe. Until then… here’s my #1 favorite post-workout recovery dish!

 

Ingredients

  • 1 large sweet potato
  • 2 tablespoons butter (healthy substitute: greek yogurt)
  • 1 tablespoon brown sugar
  • 1 tablespoon cinnamon
  • salt and pepper

Directions

1. Peel and cube the sweet potato. Honestly, you probably could just use half a large one, but this is a meal I make immediately after intense workouts and usually my only carbs for the day, so I go big. #GoBigRecoverSrong

2. Transfer the sweet potato cubes to a pot of boiling water and cook for 15-20 minutes, or until nice and soft. Drain the water and transfer the sweet potato to your food processor. Add your butter/yogurt, brown sugar, cinnamon, salt and pepper. PRO TIP: for a jolt of potassium, slice up half of a banana and toss that in there as well.

3. Process the sweet potatoes until nice and smooth. You’ll need to pause in between processing to scrape the sides. You can add a little milk (I actually add a drop of heavy cream) if necessary to help get that silky smooth texture.
